How the Pizza Throughput Calculator works

The Pizza Throughput Calculator takes five inputs — party size, pizza style (Neapolitan, NY, or any), cook skill level, fuel preference, and budget cap — and returns the three ovens whose realistic pies-per-hour output best fits your hosting profile. The math accounts for three timing factors most spec sheets gloss over: preheat time, cook time per pizza, and recovery time between pizzas while the stone re-heats.

The spec database aggregates manufacturer-published values for 25 pizza ovens across Ooni, Gozney, Solo Stove, Bertello, Halo, Witt, and Alfa. Each entry stores maximum stone temperature in Fahrenheit, stone diameter in inches, dome height, fuel options (gas, wood, charcoal, pellet, electric), BTU output, preheat time in minutes, typical cook time per pizza in seconds, recovery time in minutes, weight in pounds, and MSRP in USD. Recovery times are sourced from manufacturer documentation and corroborated against published independent testing where available.

Throughput per oven is calculated as: usable cooking window divided by (cook time + recovery time), capped by the realistic pizzas-per-skill-level limit. The output ranks qualifying ovens by hourly output for your party size, with each oven's preheat and recovery times surfaced so you can verify the math before buying.
